Here's something I found on the Mayo Clinic website...beta carotene helps patients who have sun sensitivity.
I've been eating a carrot every day and I feel that it has helped my sun sensitivity. I peel the carrot with a potato peeler, then shred it with that same tool...then top it off with some organic apple cider vinegar and organic canola oil.
I think the shredding improves the digestibility of the carrot and the oil helps extract the carotene. I really enjoy carrots this way, I don't like munching on them or eating cooked carrot very much.
Some other good things about carrots...they have vitamin C, and organic carrots are much less expensive than other types of produce like peppers or lettuce.

People have trouble with carotene overdosing from supplements, not from eating a normal amount of carrots. Beta carotene is present in a wide variety of vegetables.
Did you know that all carrots were originally purple, not orange? The orange color was only present inside the carrot. Most seed catalogs have seed for purple carrots. They are supposed to have a slightly different taste.
Most people also don't know that the tops are perfectly edible. They were once used like parsley in soups.
Anyone else have this issue?
