People have trouble with carotene overdosing from supplements, not from eating a normal amount of carrots. Beta carotene is present in a wide variety of vegetables.
Did you know that all carrots were originally purple, not orange? The orange color was only present inside the carrot. Most seed catalogs have seed for purple carrots. They are supposed to have a slightly different taste.
Most people also don't know that the tops are perfectly edible. They were once used like parsley in soups.
Anyone else have this issue?
