From your post, you are doing what you can, pacing and diet changes. My specialists said that even exercise that is recommended for most of us to maintain a healthy life isn't good for us since the latest is that the mitochondria in patients with CFS/ME aren't doing what they are suppose to whether they have been damaged by infection or genetic issue the mitochondria don't recover normally from exertion and that is why any type of exertion whether physical, mental, etc. can be too much. I started realizing at parties I become very quiet now, and my doctor explained that is because I am over exerting myself and that is my way of trying to conserve my energy. Listen to your body.
