Post exertional malaise is different for each of us. Some get it immediately, some (like me) not for about 36 hrs, some even later. It also lasts different amounts of time for each of us.
It's pretty normal to feel worse in the evening. You use up whatever bits of energy you have during the day and then it's just gone at night. You get so overtired, you get wired, the common phrase we use is "wired and tired".
Are you taking any vitamins? They don't work for everyone but they help some of us. Specifically I'd say C, high dose B. Otherwise, have you had your thyroid checked? While it's not an answer it can be a part of it. Also anemia. If you have a continuing headache might you have a sinus infection after the cold?
It's entirely possible that the stress of your gf's visit set you back in your recovery from your virus. Stress of any kind, good or bad, affects us differently than other people...more cell deep.
Rest as much as you can. Eat well. Drink lots.
