A reach is when the wind is perpendicular to the boat. 90 Degrees to about 135 degrees.
A following sea is when the waves are coming from behind your boat. They give you a boost of speed and you actually surf them and see the burst of speed. It is desirable unless the following sea is very rough.
Making for the Trades is talking about sailing into the Trade winds which is a geographic area where there is usually favorable winds.
Another interesting thing is the 80 feet of water line. Hull speed of a boat, which is a theoritical speed at which the boat can go, is based on the length of the water line. a boat with an 80 foot waterline would be theoritically fast.
Going on the outside is a course on a passage that takes you to the windwards side of all the islands and you don't go inbetween them.
A midnight watch is the watch that is stood in the middle of the night. When a sailboat is at sea you don't stop so someone has to stay up during the night while everyone else sleeps. The person who is up has to monitor things to make sure they don't collide with another ship or have other issues while they are underway. It is also said to be the loneliest time when out at sea because it is so dark and everyone else isn't around to talk to.
