It doesn't take much for me to be happy. This is an example of what makes me happy.
FRITO-CHILI CASSEROLE
2 cans chili (with or without beans)
1 bag Fritos
1 onion, chopped
1 green pepper, chopped
Shredded Mexican cheese blend
Layer 1/2 bag of the Fritos, 1 can of chili, 1/2 the chopped onion, 1/2 the chopped green pepper and cheese. Repeat for 1 more layer. Bake 45 minutes at 350 degrees.

I still enjoy walking tacos.....with extra hot sauce.....and I don't even care how that sounds.

I even put it on spaghetti.

We have a weird one right now...can't remember the name of it but it is tasty.
