Bernie, grits should be somewhere on the consistency scale between runny (and I assume 'gritty'; ironically grits should not be 'runny' but creamy) but not as firm as polenta).

I lived in Georgia and Alabama for 32 years of my life (w/the exception of a couple of years in France) and am proud to say that I have never eaten pig brains. Encountered 'chittlins' (intestines) served to me once but didn't eat them.

I like Polenta anyway it is done. Up North, in Italy, we add a lot of junk to make it really rich. That includes a lot of different cheeses. We also grill it! Yum!

My old aunt would make polenta the old fashioned way...outside in a big black pot...hung from a tri pod...over an open fire. She would sit and stir and us kids would laugh coz she looked like a witch...lol.

Of course it's food... I like em with cheese. :) And yes, I mix my eggs in them too... and bacon, hashbrowns, sausage... we eat well in the South. LOL

One time I was served grits at a friend's house while finishing my postdoc in Louisville. I didn't know what to do with them so I just shoved them in my pocket for later.

The only think I put on my grits is butter, salt and pepper. Maybe a little hot sauce if I am in the mood. I will not mix them with any other type of food though. I mean, why would you want to? Fuck, now I want some grits.
