I can make any type of bread and pastry from scratch.
Plenty of time to cook, it beats the boredom somewhat.
I’ve been wanting to bake bread. I’m going to do a Navajo fry bread this week. A regular loaf later.
I like angel hair pasta most. The texture. I also use penne pasta (sp). Sometimes I dice mozzarella cheese put it on the hot pasta (after its drained) then put the hot sauce on the pasta and cheese.
Oh yea.
Baking is so much feel. Most online instructionals I've seen are so wrong when it comes to feel. They say kneed the dough for 5-10 minutes. Good lord no. Sure it'll be airy. heheh. Huge airbubble holes that'll leave the insides like swiss cheese.
I double-rise my home loaves. Kneed maybe 2 minutes the first time, then a minute the second rise. Eggwash, and a second baking tray below the rack. Pour in 3-4 ounces of water, to steam the bread when it's halfway done baking. It makes the most amazing, stretchy crust. I do that for everything but the rye bread.
