Bipolar disorder is not just a single disorder, but a category of mood disorders marked by periods of abnormally high energy and euphoria, often accompanied by bouts of clinical depression. Clay, depending on different types, can be fun and frustrating. You really get to learn how to start all over again if that's what you're after. Pottery, though, I have no idea. I got fed up with clay fast in my high school courses, too messy for class work, I guess.
Painting is a very free moment, you can be all over the place or you can tighten up and get into detail. I like to paint figurines I buy for pennies on the dollar, spray paint them white first if you're interested in that.
You can scrap book and make a somewhat personally useful item through a month or long walk through memory lane. Those can be great gifts for family members, too.
I, personally, on the direct subject of art therapy, loved loved loved crayons. I could press down as hard as I wanted without ripping paper. (Almost all my journals have multiple pages ripped and at times like a forth of the book. What? I get angry.)
Hope this is helpful! But what it comes down to is what you'll ENJOY doing. Doesn't matter if your all that good because that's what a class if for - to learn and understand, to grow and develop skills. You'll end up feeling better no matter your choice!
Take whatever interests you, as you will get the most out of it.

Think it thorough and research the different things you can do. Choose according to what might help you and something that would be fun to learn. I find pleasure in sketching, watercolor, acrylics, writing, quilting, which are my favorites. With each art that I learned, I can express different emotions that help me manage this disorder. xo

I personally find photography to be very relaxing. I have yet to take sculpture but it could be fun.
Just go with the courses you know sound interesting stay away from the technical art courses like composition and stay away from art history or appreciation.
