MY LAST NERVE!!!
Do I look a little harried!!! Oh, my nerves!!! I have one nerve left and it seems that everybody wants to step on it today. LOL Not much new with me, same ole, same ole. Still feeling like crap, so.... tired, just point me in the direction of the bed. I would happily spend my day there in complete silence and darkness. Alas, that is not to be, got the boys to look after, a nail appointment and a tree that is calling me to decorate it. I am procrastinating and that is so... out of character for me! I’m usually the one that grabs the bull by the horns and gets it done!!! Maybe tomorrow will be better. At least, I am still hopeful and not in total despair that this thing will last for ever, I know it won’t but I need it gone like, yesterday!!I wrote about a chocolate dessert that I made for my friend and I have had requests for it so I am posting it here. It is called "Chocolate Cake in a Cup". First of all, I use a big cup, a mug. You could also use a small soup bowl. Okay, here it goes: in mug mix 4 tablespoons of cocoa, 4 tablespoons of flour, 4 tablespoons of sugar.. Mix this well. Now to this add one egg and sort of swirl the egg around to mix the yolk and white then mix it completely withe the dry ingredience. To this add 3 tablespoons of oil, 3 tablespoons of milk and ½ ½ ½half a teaspoon of vanilla. Mix well til smooth. Now put in microwave, original recipe said for 3 minutes but I found this too long, 2 1/2minutes will do it. Now enjoy with ice cream or chocolate syrup, icing whatever. I make a quick sauce that is yummy and keeps for a long time in the fridge or you can freeze it. Take 3 cups semi sweet chocolate chips add one can sweetened condensed milk, 2 good tablespoons of butter, and 1/2cup of bailey’s liqueur (plain, mint, caramel flavour) or any other liqueur like kahlua, tia maria. If you choose not to add a liqueur add milk. I melt the chips, butter and sweetened milk in the microwave . Do this slowly on high check after 45sec. And stir if not melted and smooth do it in 20 sec intervals until smooth. Now add liqueur and stir well. You will probably want to heat it up so the sauce is warm for the cake. Just do it slowly and you will have no problems.Anyway, I have to go and see if I can get up the energy and will power to decorate the tree. Catch you all later
