Flood 2016 Journal 6

Well I just had to write a few lines... Today like most days has moments you wish you could forget.. but over all a blessed day... Went to Walmart looking for a rice cooker... No luck... I did find a purse for $7 and that was good as the zipper had broken on my purse. I had several purses put up in the closets but can't find them. No problem, I don't use but one at a time anyway.

We like our rice down here. I have been trying to score a rice cooker for a couple of weeks now. Oh well. I learned something new. I cooked rice in my slow cooker, pretty good, almost overcooked so I'll adjust the cooking time. Easy enough - lightly butter the slow cooker... add 2 cups rice, 4 cups water, 1 tsp of salt... set the slow cooker to high and cook 1 1/2 to 2 hours... next time I'll do it the 1 1/2. The butter added to the flavor and kept the rice from sticking... I made shrimp and okra gumbo in my big electric skillet.

The shed is dry and Richard has been moving a lot of our stuff into the shed. We're going to get a grill and enjoy cooking outside some as the weather cools. Bugs are bad. We've been spraying and hopefully they will go away soon.

Listening to some CDs... Johnny Mathis, Josh Groban.. Kenny G, Life returns... we have inconveniences like everyone but good food, music, sure help. Hoping you all are finding your feet as we all put our lives back together.

Good food and good music certainly do help. Thinking of you with care and hoping each day for a traveling mercy to be yours whether it's found in a crock pot or in a helping hand.

I am HORRIBLE at cooking rice!! I can even mess up the "boil in a bag" kind, LOL! I've never tried rice in the slow cooker, may have to give it a whirl. I'm a potatoes gal, but my husband much prefers rice....so I try. I haven't had a good gumbo in years....makes me hungry thinking about yours!

I'm glad things are continuing to return to normal, but I'm sure there is still a long way to go. Keeping you and Richard in my thoughts~
