Fixed a mistake
So the other day I made some cupcakes from scratch. For my cakes I usually take a box mix and doctor it by adding a lot of ingredients to make it taste homemade. Completely different than the back of the box directions but I've found it makes for a whole new flavor/texture.
Anyway in wanting to better my baking skills I tried a new recipe. Did not go very good but I thought once I make my icing (the same recipe I've used for a while) it'll all be good. So yesterday I went to make the icing. First attempt failed bc I thought my heavy cream went bad. Had to throw away the whole batch as it tasted so awful. Made another one but without the cream and it was still awful. Realised it was the new vanilla extract I got. Tastes absolutely terrible.
I still decorated anyway as I really was looking forward to trying new techniques I've been seeing online. Well that went bad too as I had very little patience left and my icing didn't color the way I wanted. It was too thin and I really just messed up. I ended up throwing away pretty much all the ones I decorated.
Today I almost threw away the rest but then I had an idea to try and make cream cheese frosting. I did and it turned out really good and actually saved the cupcakes! The flavor is a lot better now and I am pretty happy with it. I was actually really upset the other day when I messed up like my hopes were just too high.
But I'm glad I learned from it and took some notes to make it better the next time. Now they are actually edible and I'll probably have some for breakfast. Don't gave any pics of the current cupcakes but they are pretty simple just chocolate cupcake with some white icing on top. Not fancily decorated but still good. This pic is the ones that ended up going in the trash.

Personally, I love the training cliche that if you aren't falling down, you aren't trying hard enough. I know of nothing that is more limiting than fear of failure. Which leads me to another beloved training cliche. "I never lose. I either win or I learn."

those are gorgeous!!! I am so proud of you that you stuck with a frustrating task.....pat yourself on the back for that--you have what we call in the biz, "frustration tolerance" --so many people bail when the going gets tough.
Thanks so much! I definitely let frustration get to me most of the time but I have to learn to overcome it eventually.
