ANOTHER GLORIOUS DAY
Good day, my friends. I hope everyone is having a good start to their day. I am up and about early as usual. I am feeling better than I was last week. I am sleeping much better and this has a huge impact on me.
This morning I am putting together a slow cooker stew for my daughter. I am taking it down to her around 10:00. Then she can cook it there all day. I am letting her keep the slow cooker as I received a new one. I also had hubby make her a maple bread in the bread machine. I am doing this because she is moving in with her boyfriend this weekend and they are starting to move tonight. I know how much trouble it is to cook when your stuff is either packed or heaven’s knows where.
Her boyfriend is a real sweetheart. He is just perfect for her and treats her like a queen. So....unlike her last ass of a boyfriend. This guy is 5 years older but that’s no biggy. He owns a really sweet log cabin on an acre of land. He has a secure job with benefits which he will be putting her on. Just a super guy. I am so happy that’s she is happy!!
Tomorrow my gal pal and I are having a spa afternoon at my place. We will be doing the lavender hot tub, some facials and manicures as well as some hair treatment for her. I have the specialty coffee she loves, we will enjoy one glass of wine while soaking our troubles away. I am also preparing a super dessert that is fairly low in calories/sugars (she is diabetic). It will be a fun filled afternoon.
The recipe, if anyone is interested is: take one large package of light cream cheese at room temp and beat it til smooth. To this add one large thawed low calorie cool whip beat until thick. Then add one pack of low calorie strawberry jello and beat til smooth. Keep it in the fridge. I serve it over sliced strawberries. You can put it on any fruit even canned fruit cocktail. I have also put it on pound cake. Very simple but very yummy. I will also confess to eating it right out of the bowl!1lol!! Note,,,if it is too thick when you go to use it just add a little milk and stir well til you get the consistency you want.
