
What is the best thing you probably ever came up with on the fly using leftovers? Mine may have been last night.
I was on my way home from the gym and my fiance texted me and asked what's for dinner. I'm like fuck I dunno. He said pulled pork nachos would be good. I never would have thought to make that but I see it on menus alot.
I didn't have alot of time but when I got home I popped a chunk of that pork roast in the microwave. Got a small kettle going on the stove and made my secret cheese sauce. Cut up some fresh jalapenos from the garden (only thing that's doing well in garden) then shredded the pork and added sweet baby Ray's. I piled that on top of tortilla chips with the cheese sauce then topped with sour cream. I also boiled up some corn on the cob and got everything done just in time for when he got home. And mom had already eaten leftovers earlier so didn't have to worry about her since she won't eat Mexican food. Or anything really, she is super picky.
