Every time I have made vegan baked goods, the only extra ingredient I've needed has been flax seed.

As far as your granddaughter is concerned, don't write her off. She very well might be open to vegetarian foods and eats stuff like burgers and pizza because they're provided to her. Also, this will give you a chance to introduce her to a healthier diet, which is always a good thing.
fatfreevegan.com This woman is great and has rescued me countless times when i was looking for a vegan alternative to an old favorite... like CAKE!
I'd say if you're cooking for other people you shouldn't have to worry about their specific favorite foods. Cook something that YOU want to eat. You don't have to cook meat just because someone else likes it. Just like you wouldn't expect someone to cook tofu for you. If they don't like a part of the meal they don't have to eat it. Be a good example to your granddaughter and cook something meat free and healthy. She's only 9 which means she is still looking to adults for an idea of what she should eat. It's an important time for shaping her eating habits for the rest of her life.
I know the tendency for parents and especially grandparents is to indulge the children that they love and give them all the tasty treats they want. But if you really love the child, give her the food that's good for her! And teach her to enjoy them and what they can do for her body. She might not thank you now, but chances are she will later.
As for the burgers, Linda Mccartney range do great vegetarian range of sasauges and burgers. I think tehy taste like the real thing, a child may never know the difference. You could treat this as an opportunity to introduce new foods into your and a child's diet, play around with ideas and have fun with it. In my opinion, you don't need meat or meat substitutes for a great meal.
Congratualtions on deciding to become vegetarian and good luck with it!!
