And the same is true for carrots too - no need to peel a carrot either.
And no need to cut off the tops of the carrots.
So the peeler is a less-than-healthy instrument, IMO.
Carrots are the same way, I don't like the fuzzy roots or the tops. I guess I won't be throwing my peeler out for a while!
I have heard about the "paraffin" being put on cucumbers and on apples too but that is too much for me to resist so I eat the skin of cucumbers and of apples too even if there is some wax to shine them up.
I haven't peeled potatoes for years, since hearing of how healthy the skin was, plus I like the taste....as with carrots & parsnips too..don't eat the tops mind you (yet...) As for cucumbers, I didn't know about the parrifin coating (wonder if it's only in the states?!?) Doesn't washing them make a difference?
I only use my peeler for ginger root & then not always.
Can't think of a vegan mashed potatoe recipe....you could google it

The boxes of instant mashed potatoes all call for mixing in milk and just use water instead and it comes out fine.
Then I dump in huge amounts of salt and margerine - but no milk.
But my favorite mashed potato recipe...
Just boil some potatoes in their skins until tender...
At the same time saute up some chopped kale and a clove of garlic in olive oil. Don't add water or anyting jsut let it saute a bit until tender.
Then strain and mash the potatoes adding in the sauteed mixture. A little salt pepper, and soymilk and YUM! Of course a little vegan margarine...wouldn't hurt either!
I also really like making potato fries in the oven. Just cut them into thick strips and drizzle with a little olive oil... bake at 400F flipping a couple times. ANd you can eat them with some yummy organic ketchup. I've also tried sprinkling them with herbs and spices while they are baking which is a nice change.
ANyway yeah definitely eat the skins. No reason not to!
