I use quite a bit of whole oat and barley. You can cook them, along with wheat berries, a lot like rice. If you ahve a rice maker, you can toss them in with a little more water (like a 1:1.75 ratio of grain to water) and cook on the "brown rice" settings.
I also had a thread recently on the wonders of bean flours and some things to do with it.
Any vegetables are pretty darn good for you too.
I did a gravy that was chickpea flour, a whole bucket of spices (thyme and oregano come to mind) if I stood in front of my spice rack I would remember better.

Soups are pretty easy. some favs of mine is mushroom barley, lentil and chili.

As you get older, you should, as you already know, decrease carb intake. At the same time, you should increase your protein and fat intake.
With that said, not all carbs, proteins and fats are created alike.
When you avoid carbs, avoid carbs with a high glycemic index like the plague. I am talking about white sugar, white flour, products made with...wheat...yes, even whole grain. Sprouted wheat bread and brown rice bread is ok. The best choices are quinoa, millet and amaranth...with brown rice following right behind.
When it comes to proteins, you already are eating the grains mentioned above so complement them with the ususals: black beans, lentils, chick peas, but you can also add other sources of protein and still lose weight. You can have almonds, sesame seeds, and other nuts (not peanuts). If you want to really go overboard, soak your seeds and nuts while raw (not roasted) in mineral water overnight. This flushes away the fat burning inhibiting enzymes leaving you with food that actually helps burn fat).
It is hard to believe but people swear by eating seeds and nuts as part of a well balanced diet. Once you soak them, you could very well roast them and lose some nutrients but at least they won't hurt your diet like you might think.
I love eating roasted quinoa and sesame seeds with sesame oil and soy sauce.
Also try tempeh and, while not a good source of protein, shitake mushroom substitute (for meat).
Last but really should be first, medical grade liquid minerals. These are so essential because they are sorely lacking even in the best of diets. Something about our soil these days makes getting all 72 nutrients very difficult unless you are an organic farmer with the best soil in the world.
