I looked it up and the Publix cheese I buy for the kids uses microbial enzymes. Also, it uses corn starch instead of cellulose (which is wood-pulp). Good stuff!
If you have a Publix near you, I recommend!
my favorite cheese humboldt fog.....sweet baby jesus. Definitely not on the vegan plan.....but when I fall off the wagon you will find me in the stinky cheese section
