I came across an article the other day that explained the secret behind Greek yogurt. First of all, I have to say the stuff hasn't exactly appealed to me and I've tried a variety of flavors.
A friend of mine kept pushing me to try the stuff because she thinks it's the greatest thing to hit the market in her lifetime. The idea that it has twice the protein of regular yogurt sounds great, but the wallpaper paste texture really turns me off.
Rather than pay the outgeous price, I'm going to try making my own and flavoring it myself. I used to do this with plain yogurt year ago, but it was called yogurt cheese...nothing Greek was mentioned.
Place a coffee filter in a strainer and set over a bowl. Pour plain yogurt into the filter and let stand in refrigerator for several hours or over night. The yogurt will become thick as the whey drains through the filter.
This thick, Greek style yogurt can be flavored with herbs and used as a dip for raw vegetables. I did this a long time ago, having no idea this would later become the trendy thing to do. I plan to experiment with different kinds of fruit, maple syrup or agave to sweeten or by adding it to a smoothie.
It's obvious why this is higher in protein...shaking my head.
