If you're one to think automatic "Yuck," It used to be, I couldn't stand the thought, the smell or the sight of collard greens. I can't believe how much I love them now! My Dave makes an awesome stock pot full of them. Wow.
Anyone tried these for a snack? They have loads of NATURAL potassium, magnesium and a cup also has 4 grams of protein! Perfect mid afternnon and mid evening snack, at least for me. :)

I just do not feel well and I really think that it's because I cried yesterday on my way to work about my Aunt who is in the hospital. I don't think that we will have her much longer. She is very frail. Now she needs help eating. So, this is the third time in a year that I felt this way after crying. I think crying releases toxins into my body. I also worked up a sweat at the gym...
But they are good for you.
How come the foods good for us, are not the most tastiest ones sometimes, or don't sound tasty?
I atually picked up a bag of mustard greens by mistake the other day and when I went to cook up my greens, I almost tossed that bag in the trash. One new veggie too many, lol. But.... I cooked up the collards and then asked about those mustard greens afterward. Mom said "they are sooooo good for you" and my hunny laughed and said if I just mixed them in with the others, I wouldn't even notice the difference, lol. So, I'm going to get some more collards and mix those in. We'll see what happens.
I've been so proud of myself. I actually made my own collard greens twice now. I'd never have thought that I'd be making collard greens. Wow. Now I'm hooked. Whenever I feel hungry, I can grab a bowl of those and amnot hurting my diet at all. (I don't use a pound of bacon or anything like that. I used low sodium beef broth and some of the beef drippings from our roast.)
