I had an Endoscopic Pancreatic Function Test with Secretin done early this month to rule out Pancreas Function. It was normal. This was done at Stanford University in California. Most University settings do this test.

I also have Parasite/Protozoan, Blastocystis Hominis, that was found in a stool specimen performed by Genova Diagnostics. It's a special lab that is known for finding these bad bugs.
Many times from what I've read (you can go to www.badbugs.com) when you have a parasite the symptoms are like IBS. So when the doctor's tell you it's IBS many times the patient has a parasite. Just something to think about!
As for the fatty stools, maybe the sphincter of oddi maybe malfunctioning or the liver might be involved. Do you still have your Gall Bladder? I'm just throwing some things out there as I'm not a doctor but have gone through extensive testing to figure out why I'm very sick.
