A quote from one of our happy Over The Fence members: "Hi JS- Thank you for the welcome message. Do you remember that show Home Improvement and the neighbor Wilson Wilson Jr. who would meet Tim the Tool Man at the fence, but never showed anything but his eyes? He was so funny. This group reminds me of those encounters... you get the wisdom, humor, and support from your DS...

3 1/2 pounds Beef roast -- sirloin tip or rump roast
12 ounces (jar) Italian Giardiniera drained
12 ounces (jar) pepperoncini peppers
1 Envelope Italian salad dressing -- (zesty Italian)
10 ounces Can beef broth
Place roast in slow cooker (3 1/2 quart). Mix all other ingredients together, draining oil from giardiniera. (When adding giardiniera and pepperoncini, use 1/2 jar for a mild version of all for a spicier version).
Add all ingredients to slow cooker, cover and cook for 18 (yes, that's right, eighteen) hours on LOW. Meat will be very tender - can use a fork to pull apart.
NOTES: Can place frozen roast in cooker. 12-16 oz jars can be used - add 1/2 jar or more to suit taste. Tested: 16 oz jars added - result - very spicy--- will use 1/2 jar or 3/4 jar next time. Good "throw it in all in the night before, let it cook all night and the next day"
You don't drain the pepperoncini - if you use a small jar, dump all the juice in (it's just vinegar) and if you are using a half jar, dump in half the juice.
Italian Giardiniera - I found it at the grocery store in the pickle aisle. It was a mixture of cauliflower, carrots, celery, onions, etc. and it seemed to be pickled. Very flavorful. I also found the pepperoncini
Part of the flavor comes from the pepper mix. Let me say again though that you really need to use "mild" and not "hot" - at least for your first time out. Cooking something in hot peppers for 18 hours would probably make it spicy hot.
You can use cheap cuts of meat because after 18 hrs, that roast just falls apart.
Throw into a bowl:
several different sorts of raw vegetables, chopped and sliced
add some fresh or dried fruit if you like
a small handful of nuts and seeds
fresh herbs - parsley, mint, chives, other favourites
sprinkle with some cold-pressed oil and lemon juice or balsamic vinegar
add one of the staple starches - potato, corn, rice, bread
Enjoy.
Baby back pork ribs.
1 slab of baby back pork ribs
1 jar of your favorite barbecue sauce.
thick heavy Reynolds aluminum wrap.
Cut your slab of ribs in 4 pieces.
cut up aluminum foil in 4 pieces large enough to wrap up each piece of ribs. Put a generous amount of barbecue sauce on each piece of foil and then put the piece of rib on each foil. add more barbecue sauce to the top of the ribs and wrap them up tight. Wrap carefully so their are no holes in the aluminum foil. This is important.
Put in the oven at 300 degrees and bake for 2 1/2 hours. I put them in a big casserole dish.
They come out so juicy and tender they melt in your mouth.
I gave this recipe to my sister and she was stunned at how good they were and so easy.
their latest email some looked great
