Low Carb, Low Fat Egg Nog

I made this tonight...so yummy and finally found a sweet smoothie for my sweet tooth...

low fat milk..1% or fat free
raw eggs
Vanilla extract..small cap fill.
splenda
cinnamon
ice

Use your own judgement on the serving when blending..Blend well,,and enjoy!!

Sounds good, Liliann, except for raw eggs. I am a country gal and must have my eggs cooked, lol.....

As I recall it, when my Dad used to make homemade eggnog, he'd heat the milk to scalding (just below the boil point, I think) and slowly pour it into the eggs, beating them the whole time. That cooked the eggs for safety, but kept them from curdling. It's been almost 60 years since I watched him doing that, but I'm pretty sure that's correct. You might try making a small batch that way to see if it works for you.

He made realllllly good eggnog; but, of course, he made it with whole milk, eggs, sugar, brandy, vanilla extract, nutmeg and cinnamon, and he served it warm. Yum! Good stuff! :)
