As to the dairy thing, almond, coconut and soy milks are good options. I prefer soy. It has a good texture and its not sweet like the others.
Here is a link to some recipes, it's a UK websites that I sometimes use. I don't need a lactose and gluten free diet, but I like to try different things. Some can be a bit time consuming though (hope the link works)

Like Tallie86, I've found recipes on allrecipes.com. And, dairyfree is right, there are some great ideas on Pinterest.
It just takes awhile to get your head wrapped around it all. Gluten free bread is just different. I make my own and it is more of a batter bread -- it is not kneaded.
