Lyme disease is the most common vector-borne disease in the Northern Hemisphere. It is now one of the fastest growing infectious diseases in the U.S. Lyme disease is caused by infection with the Borrelia burgdorferi bacteria, and is primarily transmitted to humans as well as dogs, horses and other domesticated animals by the bite of infected ticks.
I think many people are also lactose intolerant, which causes the milk issues. I think it is just b/c with Lyme, your gut gets so screwed up, that it has trouble digesting all sorts of stuff, and the stuff it has trouble with causes inflammation, which then makes it harder for you to digest the nutrients you need, etc. It is a bad cycle that just gets worse and worse.
Honestly, there are soooooo many possible food sensitivities that people can develop with lyme... as well as with other chronic illnesses. There is no "one size fits all" diet for this diagnosis, b/c I think everyone's system is a little different and needs different things.
I think WheelWatcher is right, it varies from person to person-- you and your doctor should be able to figure out with a little experimentation what works best for you so you can still eat well and manage the sensitivity of your symptoms to food :)
