I caution you about almond milk to the extent that you would want to consume the same amount each day - almonds are goitrogens.

I use coconut oil for whenever a fat is needed for cooking and make omelets while cooking on med-low heat.

I am a runner and need carbs for breakfast- maybe I'll shop for some French toast or waffle that I can combine with the eggs.
Recently read a study that recommended eating many more calories for breakfast and many less for dinner. But then you need to plan some good breakfasts!
