I also had to give up dairy and nuts. Cheese to me is about as bad as gluten. I start flaring up within ours of eating cheese. So you may want to experiment dairy fasting if your not already dairy free. I'm curious about the cheese thing. Is it because dairy cow's are fed grains and all grains have gluten? I dunno have not researched that yet. Does anyone know what dairy cows are fed? Does milk contain the same type's of protien found in gluten because of that? We'll for now all I know is that cheese makes me flare up too. I'm a big cheese lover too but it's just not worth 3 to 14 days of burning searing pain to have that slice of pizza or cheese omelette. Special thanks to Gfpaperdoll for convincing me to try giving up dairy when I hit a wall with my gf diet. Not to mention how much she shared with me about gluten free living. I feel like im in a third phase now shifting over to paleo diet.
Cows are able to digest the protein in grains and break them down into amio acids, therefore you are not getting the gluten protein from cows; either meat or dairy;.
This is my non-professional understanding......The autoimmune inflammatory response it due to the proteins that our bodies cannot tollerate. Since dairy has a lot of the larger proteins like the protein found in wheat, it is most likely your response to the proteins in dairy AND wheat.
