I grind up dates and nuts into a paste. Add some flax seed meal. Add some nuts and dried fruits and cut into bars. But I would think that is too much sugar for a diabetic.
Lately, I am making veggie smoothies.
I start with plain soy milk, heated to steaming.
While it's heating, I put veggies into the blender. Celery, tomatoes, bell peppers, cucumbers, onions, garlic, parsley, spinach. No carrots, they are too fibery.
Fill the blender with about 4 cups of veggies, then add milk to the 4 cups level, put the lid on, and blend it on high, you might have to help it get going with a pusher of some sort.
Then add Real Salt, basil, curry, what have you. Start with just 1 clove of garlic, it can be pretty hot raw.
I get a great boost of energy from this. Especially if I add 1-2 T of Spirulina. I also add 1-2 T of dulse sea weed flakes. The minerals really help the body to feel good.
Add some nuts for weight gain. Cashews and pinenuts work really well.
Good luck!
