My husband is half Chilean, so we eat a lot of hispanic foods, but I make an amazing curry too! If you're interested in enchiladas, or indian I've got some great recipes. I'm of course from the south though, so I can also help out with some comfort foods if you're into that.
I would like to build a file. I have gone through cooking and recipe websites, but I know most people have recipes that can't just be found at Betty Crocker lol
Don't think I need to share the recipe as it is really simple, but here in Mexico (for those who doesn't know) we squirt a little bit of lime juice on the avocado so it doesn't oxidate so fast, and when mixing it add milk to make it extra creamy.
I put that thing on bread, tortillas, tostadas or whatever I can :p

I don't know, just a "bring the community together" thing, and get good ideas.
Chuck Roast (at least 3lbs)
1 package of hidden valley ranch dressing mix
1 package mccormick au jus mix ( I substitute brown gravy mix so my daughter can have it. Gluten free)
1 stick of butter (I know..but it's yummy)
3-5 pepperoncini peppers ( I use more cause I love them)
Place roast in crock pot. Sprinkle dry package of ranch dressing, then package of au jus. Place stick of butter on top, then line up the peppers on the butter.
Do not add water, cook on low 7-8 hours. If your roast is small, don't cook it that long.

What's great about this is you can have roast one day, then put it in a soft taco the next. Or put BBQ sauce on it and eat it on a bun

I sincerely love the recipes from Mel's Kitchen Cafe...I've made quite a few. Our favorite is the sweet and sour chicken, although I have adapted her recipe. I generally do my own thing sans recipe but, if I do follow one the family tends to like, it's from her: http://www.melskitchencafe.com/
Cooking is something that soothes me...when I'm feeling well enough physically to cook, that is. But, if I am, I get peace and serenity out of making good food. I am almost 100% paleo right now but I still enjoy cooking.
