As for gmail, I looked it up, and they don't have a block feature, instead you can set up a filter, such that their email goes to your trash (which empties out every 30 days). Below is a youtube clip that explains how to do it (giggled at the snoring dog in the background, but I thought it did a good job showing you how to do it).

The comments section has some good tips, like how to set up canned responses (for example a fake auto responses that look legit, that they've been blocked, or the email no longer exist). About 3/4 of the way down the comments (April 24, 2011), explains how to do the canned responses. You can probably find something on youtube as well.
