I don't like to cook in suimmer
I am not as ambitious as you. I will try to skip all of the chopping, slicing, dicing and cutting if I can. I buy the prepackaged coleslaw mix in the veggie section. I like to buy it already prepped. I just make my own coleslaw dressing.
I was not allowed to get in my mother's way when I was a kid. She preferred to just throw something together, so I didn't really learn to cook at all till I got out on my own. Well, not true,, I went to cooking class with Girl Scouts but never cooked at home for meals. I used to like to eat at restaurants. Then when I had to feed a child I got into food preparation. We were very poor so I got into making most things from scratch cuz is cheaper. Then with the diabetes and kidney stones I had to really learn what nutrition is all about. So now here I am.
