For appetizers we're having a veggie platter with 3 kinds of dip (Garlic hummus, bleu cheese roasted pecan, and ranch), and fresh cheese and crackers. Then for desert I'm making chocostrawberry mud pie (chocolate pudding, cool whip, strawberries, gram crackers), and pumpkin pie.
Even though we're making so much food, we're going to have a lot of leftovers. My goal as well is that I am making everything fresh. Nothing is instant. Nothing is processed. Nothing will be diced up and boiled so most of the nutrients will still be there in all the food. I chose foods of all different colors to try to take advantage of the different nutrients in the different colors, and the way our Thanksgiving dinner goes, that one meal is all we eat that entire day. We having appetizers around 1. Dinner around 3-4. Then desert at 6-7 or later. It's a full day. So if you look at it that way, it's not as terrible because it's not like you're eating 2 other meals that day too.

Only blip was I pulled out hte pumpkin pie to put in the fridge to chill before we ate and it was all moldy!!! I was so disappointed. But I returned it today and they gave me my $5 back with no hassle so that's good.
