Hey you guys! Remember those little Orange Sticks at Christmastime? Chocolate covered orange jelly? Well
I used 4 colossal avocados
3/4 cup maple syrup
1 1/3 cup cocoa powder (I think) since the avos are so big
1/4 cup orange juice frozen concentrate (do not dilute)
and 1 T vanilla
Put 3 cups in the freezer and keep one out.
Peel a few tangelos and section them onto a small plate in a nice circle, like sunflower petals.
Dip them into the mousse and enjoy!
A much healthier dessert than those crappy little orange sticks!
Sounds yummy. I wonder if orange zest would work as well. I made awesome chocolate orange spelt cupcakes that way once, but it was way too labor intensive.
My daughter had some frozen tonight for her movie night treat (Once a week we do chocolate and screens). I want to make another batch tomorrow. The orange juice sounds really yummy but I don't have any. We got oranges from the co op; maybe I'll scrape some rind into it.
You said Ice cream....I got to where the mousse was just too rich for me, so it sat in the freezer. And today I was inspired.
Vegan Chocolate Ice Dream
Make some vegan mousse with avocado, cocoa, maple syrup and orange juice.
1.5 pounds avocados (4 large ones)
7/8 cup maple syrup
1 1/4 cups cocoa powder
1 T vanilla
1/2 cup frozen Orange juice concentrate (do not add water)
Blend in food processor until very smooth. Freeze in 8 oz containers, makes about 3 or 4 cups, don't remember for sure.
Chocolate Ice Dream
1 cup vegan chocolate mousse, defrosted (mine weighed 9 oz so it was a bit more than a cup)
1 cup nut or seed milk (I used hemp seed milk)
1 tray ice cubes (my trays hold 12 oz)
Put mousse and milk into Vita Mix. Blend.
Add ice cubes and cover with lid. Process on high for about 30 seconds. Use tamper to help it mix up.
Makes about 3 or 4 cups of really creamy dessert. This is really like ice cream, not like ice milk. The avocados make the difference.
That sounds yummy. Do you have to eat it immediately or does it keep in the freezer? BTW, I now use less than 1/2 cup agave and it's still sweet enough.
Ok, took it out of the freezer and let it sit in the fridge for several hours, then put it into the food processor (cuisinart) and smoothed it up, then added some walnuts and chopped them in for 10 pulses for a nice chunky treat. Hubs added some more maple syrup. I thought it would be too sweet, but it was really good.
