Gastritis is a medical term for inflammation of the lining of the stomach. It means that white blood cells move into the wall of the stomach as a response to some type of injury. Gastritis has many underlying causes, from infection with the bacterium H. pylori, bile reflux, or excessive consumption of alcohol or certain foods or drugs like aspirin.

It is a gel rich in B5, that you put in your eye. "Adjuvant therapy to a specific infectious corneal processes of bacterial, viral or fungal origin." Also used for accelerating healing from eye injuries.

From what you mentioned, it seems like you got on Zantac, then quit cold-turkey, and of course immediately experienced acid rebound syndrome, as your body learned to generate more acid to compensate.
This acid rebound syndrome injured your stomach more, and the dumb doctors, who never warned you about anything, put you on far stronger acid suppressors in form of PPIs.
You can usually know that your nutrients absorb poorly if your stool is pale. It means the stomach can't process the task, and does a rush job.
Please try to give yourself a break. Your stomach IS reactive to your anxiety levels, which makes this tricky. Your life isn't going to be the same for a while, you won't be able to handle EVERYTHING like you did, until you find how to manage this.
You need to eat small bland meals every 3 hours until you stabilize. Can you eat oatmeal regularly? Mashed potatoes? Eventually after a week of that, wait 30mins after oatmeal and slowly eat a mashed boiled egg?
I also believe you should jump off PPIs and onto an increased dose of H2 blockers. PPIs are the last line of defense, with corresponding risks. H2 blockers are less harmful overall. Also a number of PPIs vary wildly in their effects/side-effects from person to person. Supposedly Nexium (esomeprazole) is the most stable in that respect, but it's still a PPI...

You will get better. Cut yourself some slack. Put on the brakes for a bit.
Doctor's guesses - maybe nutritionally I'm out of whack, maybe it's the epilepsy medication I'm on interacting, or maybe I'm allergic to PPIs, even if mildly, because of the more rare side effects of joint pain, and muscle pain/twitchiness and weakness.
Bloodwork results will be the next thing, then in to see a GI and get my scope and all that. I'm feeling a bit refreshed...after coming out of a doctor's office and feeling listened to for once. I just want to get this sorted and over, so my stomach can heal up enough that life can sort of return a bit to normal and slowly introduce small quantities of non-bland diet foods back into my system.
