Gastritis is a medical term for inflammation of the lining of the stomach. It means that white blood cells move into the wall of the stomach as a response to some type of injury. Gastritis has many underlying causes, from infection with the bacterium H. pylori, bile reflux, or excessive consumption of alcohol or certain foods or drugs like aspirin.
Just try to control on your anxiety things will be better with time.
I've been tested as well, with Alcat blood testing and know my sensitivities but it is those very foods we crave because when we eat them our bodies release adrenaline to go fight the sensitivities and endorphins follow adrenaline around like puppies on boys.
I am wondering if the reason you have such good luck with your chicken and potatoes is more because you are avoiding some trigger(s), something like eggs, dairy, gluten, grains, etc.
If you are fine on potatoes then most likely it's not a nightshade issue but if pizza, etc trigger you then gluten seems likely.
Perhaps you might consider doing an elimination diet like your chicken and potatoes and when you are feeling better, try one and only one additional food at a time, eat it every day for a week if needed to see how you feel. Write it down, you may not remember later otherwise what is ok and what is not.
This whole thing is such a process.
Obviously you won't get enough nutrition from chicken and potatoes to be healthy for long. You'll get anemic and need b vitamins, etc. So it would be best to find your culprits and just eliminate those...
This can take some time.
I did my work on this over a period of 2 yrs (I have had chronic gastritis for over 3 yrs now). but now I have a good understanding of what I can eat and cannot. It's not fun but I can eat more than the rice and canned chicken I used to eat.

I can relate a lot to not wanting to go out, or just feeling too unwell to do things, and how I see the sadness and resentment in my gf that im just staying in feeling unwell again.
Eating carefully is hard when u start to feel better, but i think is really the key to beating this long term. Even when we feel better our stomach may not be healed. Remember that an inflamed stomach doesnt cause symptoms in most people, so even if you feel good you may need to eat carefully for a long time until the inflammation has settled.
