Gastritis is a medical term for inflammation of the lining of the stomach. It means that white blood cells move into the wall of the stomach as a response to some type of injury. Gastritis has many underlying causes, from infection with the bacterium H. pylori, bile reflux, or excessive consumption of alcohol or certain foods or drugs like aspirin.
This is from my experience and friend who went through the same thing, he used PPI for a week he had heartburn for months but now he eats pork and tons of non-GERD stuff just fine(he never had gastritis though).
I felt no damage done to my stomach from quitting PPIs either but if you decide to go back to PPI, taper super slowly this time. It's hard to say what to do in your case assuming you don't have more acid or gastritis anymore, just a weak LES from PPIs.
We don't know what's really going on so talk to your doctor at least once about this.
That's not how it's done. Getting off any of these meds is extremely hard. The goal is to switch from one to equipotent dose of another, decisively.
For some people even though there are no signs of damage, they get symptoms from acid irritating the stomach. If PPIs give you symptom relief then I would stick with them for a while.
