Mini crustless quiches make tasty lunches. Once you find good recipes it becomes easier to adapt. Over here (England) most supermarkets have good meat alternatives for sale such as Quorn.
It's not all boiled vegetables and you don't have to like all vegetables either. I don't like mushrooms or peppers but I'm still a veggie. I had the bypass so I'm not sure exactly how your meal habits have changed but if you look for recipes you'll find them.

I LOVE tofu and make a killer stir fry with it. I love beans and all the dairy products, so it would be easy to go vegetarian.
I am not doing this for any ethical reasons, it's just what I want to eat now...
I had a friend that went Vegan and she literally ended up in the hospital. Protein is really important for the GBS patient and it's so hard to get that in on a vegan diet.
