Take it very slowly. Try one new food item a day--no more. Small portions. I would take a bite or two, chew very well and then wait 10 or 15 minutes to see how my body was handling it. Even now at 5+ years PO, I still have to be aware of what is happening because some days, what was fine yesterday suddenly isn't today.
I dumped once when I ate something that my pouch did not like, and once when I ate too quickly. So take it slowly. You have a new reality, and you will never eat in the same manner that you did before GBS. You'll eat different things, in different amounts, and you'll get tired of chewing. (LOL). Sometimes the prospect of chewing something to mush is enough to make me not eat it. :)
