Tonight's creation, is in the crock pot for tomorrow's dinner, and for Mom, who is in the nursing home, where the food STINKS!
Turkey Sausage & Vegatable Medley, and it only takes 4 hours on high in crock pot.
Cut up 4 cups of vegatables: Carrots, onions, celery, portabella mushrooms, red and green peppers ( i use the Cubanella light green peppers, very sweet, and not too tough on the stomach, like green peppers are for me), i put a few garlic cloves cut up into to also.
Add 2 cups of fat free, low sodium chicken broth.
cut up Turkey Sausage in slices. The casing on mine, just slid off, when i was cutting, so it was kind of like chunks of sausage, rather than slices. I used about 3 medium sized turkey sausage.
Add a little salt substitute and pepper, you can add it later if needed.
Spray the bottom and sides of your crockpot with cooking spray.
Layer the more dense veggies on the bottom, and then add the sausage & 2 cups of broth.
Cover and cook on high for 4 hours, or cook on low for 6-7 hours.
Add a handful of baby spinach, and cook for 10 minutes before your 4 hours are up, with the cover on, so the spinach wilts.
That's it!!! I will let you know tomorrow how it tastes!!!
I figured that i can just measure 1 or 2 ounces of the sausage for my protein, and the rest is veggies!!! Sounds like a nice, tasty meal for these bitter cold nights!
