It took until about 12 weeks out for me to start feeling like I had much energy. Then I was able to walk more so as long as you ARE walking, I wouldn't worry too much, you'll soon be able to do more.

You can do your 20 minute walk at two different times a day. I never did 45 minutes of exercise in a row the first year after GBS. I broke it into 10-15 minute sessions.
I was only on liquids for a week then my program had me on chicken, low fat cottage cheese, tuna, shrimp, fish, crab, lobster, eggs, beans, and tofu.
If you're not going to follow the rules straight and narrow, I encourage you to make decisions with your head rather than with your emotions. If you're going to reach for real food, go for full on, solid protein. Make sure it is moist and chew it into a liquid (spit out anything that doesn't chew well). Stay away from the white carbs and processed foods...they can go down easy but will stall your weight loss.
