Gastric bypass (GBP) is any of a group of similar operative procedures used to treat morbid obesity, a condition which arises from severe accumulation of excess weight in the form of fatty tissue, and the health problems ("co-morbidities") which result. LOL. So I have been whining lately about trying to have something to eat that wasn't a shake or yogurt or all the other boring things I eat because my work days are so long and I don't want to cook by the time I get home. But...you can only whine so long and then folks want to SMACK you!
So the other night I did stage one: marinated chicken breasts in Stubbs' marinade for pork (a little heat, some ginger, something orangey...nice). Then I baked it for an hour IN THE MARINADE. Lovely, juicy and tender. So tonight I did phase two: sauteed some chunks of onion in water with cumin, chili powder, a little oregano, a little garlic...and then when the onion was translucent I threw in a cup of the marinated diced chicken. Stirred it all together and measured out 1/2 cup into a corningware bowl, topped with a slice of light cheese and nuked it just enough to melt the cheese. Topped with salsa and I was in Mexican heaven! Blame it on Darla Renee', she was talking about tacos the other day.
So now you can try it too, just use any marinade you like or make your own up with broth and spices, with a little something acidic to tenderize the chicken (lime, lemon, grapefruit, vinegar, whatever).

it does sound good i've never been able to tolerate spicy foods due to my hernia but not that is gone and my Gall bladder is gone maybe i will be able to have some of those things down the road. Thanks for the great idea.
