I'm sorry about your layoff, and I hope that they are able to get you back very soon.
It sounds like you did great with your meltdown, congrats on that.
Emotional eating is a challenge that EVERYONE has to deal with.
I'm a little more than four years PO of my RNY bypass. I stay on track and keep a handle on my own emotional eating by keeping a daily food diary. I use a smartphone app, and absolutely everything that goes into my mouth goes into the app, I also use it to keep track of my fluid intake because it can be challenging to get in 64 ounces everyday.
That discipline of keeping the food diary keeps me aware of what I am doing and it's consequences. I'm not saying that I never eat for emotional reasons--I do! But I am never unaware, and I am always able to visually see the consequences of my actions. It works as a very effective brake on my impulses.
I also keep sugar-free gum and hard candies (Fannie Farmer) handy. That also helps.
To take off the extra weight (which I occasionally have to do), I go back to my meltdown plan, which basically excluded carbs. Protein, protein, protein. Happily, protein digests slowly and helps you staff full for a longer time than carbs would. it works for me.
I know you can get a handle on this. Stress, after all, is just a part of life, and you've already demonstrated that you can do the meltdown.

I agree with FarmGirl too, Proteins, Proteins and Proteins. If you start and stick with lean proteins, followed by low glycemic veggies, it's really hard to add weight back on, and will usually trigger loss again.
Sorry about the layoff, and wishing you the best.
