I ate a lot of chicken, chicken salad, cottage cheese, tuna salad, and egg salad in the first few months.
With carbs, I think the key is to keep them fairly low while you are in the losing faze, so your body has to burn fat for energy. Now that I'm on maintenance, I can eat mashed potatoes once or twice a week. (as long as the rest of the meal is high in protein).
