Gastric Bypass Surgery Support Group
Gastric bypass (GBP) is any of a group of similar operative procedures used to treat morbid obesity, a condition which arises from severe accumulation of excess weight in the form of fatty tissue, and the health problems ("co-morbidities") which result. So, I normally made this as a casserole with tortillas and cheese, but I figure why not try it out in a crockpot? All the flavors are still there!!!
Ingredients:
A pound or so (3 boneless breasts) of chicken
2 cans 98% fat free cream of chicken soup
2 cans diced tomatoes with green chiles
1 small can (if desired) of diced green chiles
1 medium sized onion
Throw all ingredients except for the onion in the crock pot and let cook for 3 hours.
Dice up the onion and add it in after 3 hours (or sooner if desired).
Serve in a bowl and add some cheese if desired. Has a bit of mexican flare to it! Yummm...

Cut several tortillas in half and then into thin strips. Place in one layer on a baking sheet. Spray with olive oil Pam. Sprinkle with salt and pepper (and other seasonings if you like) and bake at 350 until golden brown. Allow to cool and break them up slightly if desired.
Sounds like they would be great for this crockpot dish!
I did have to thicken up the sauce a bit. My boyfriend at it like it was soup. We both added mild taco sauce and did put some reduced fat cheese on top. It was delicious!
