I like my ricotta in lasagna. Well, I used to. ;-)
I think on eggface's blog, she eats it sweetened with sugar-free syrup and sprinkles some nuts or fruit on it. I've never tried that.
I have made the baked ricotta when I was on puree's and I also minced up a tiny meatball to it. I enjoyed that though I know some cannot tolerate meat early on.
I also made a crustless low fat ricotta tomato pie in the summer when the tomatoes were yummy. That had eggs in it and was yummy.
I could find the recipes if anybody needed them.
I only live 45 minutes from you and Maxine and Kathy Ray live in Syracuse. If you need help I'd be glad to come!!

For me, I used the ricotta in soups and sauces.... I kept meaning to try it sweet, but with all the yogurt, I just never got around to it! Not bought any since the soft stage.
So happy to see how close your surgery is! Cannot wait! :)
As a savory meal, try adding some salsa.
