I got up early and made cinnamon rolls this morning to go with the usual coffee.
I usually have something a bit healthier. I often scramble a big batch of eggs on one of my days off and keep in the fridge so I can just reheat a serving for my breakfasts during the week.
I also love to make ahead oatmeal and keep in the fridge until needed. Or rice.
And of course always keep some low fat nutrigrain toaster waffles in the freezer. They are good topped with yogurt or peanut butter.
What do you guys like to do?

I invited Bill to have dinner with me last Sunday. He wasn't willing to drive 7 hours to mid Michigan and teased me with his beautiful ribs!!! So, of course I ate alone and had cedar salmon

often though for breakfast I will just make fried eggs in my egg rounds on the cast iron griddle I have that covers two burners on electric stove...I put Pam on to make them not stick....add salt and pepper while they cook...
Can't go wrong with breakfast for dinner. I often have an omelet or biscuits and gravy for dinner.
Used to make scrambled eggs years ago. I miss it. Am going to start again.
For the kids:
I scramble eggs (with bell pepper and cheese) ahead like you do.
Hard boiled eggs
Fresh fruit (I have children who will FIGHT for the last banana...my daughter gets up early and almost always wins)
Bell pepper slices
Cheese chunks
Old fashioned oatmeal (works fine just adding boiling water) with or without fruit
Whole Wheat French Toast (made ahead and frozen)
Leftovers (my son is more likely to eat breakfast as a late night snack and leftovers for breakfast...shrugs)
Toast
Rarely plain vanilla yogurt (the big package, not the small over-sugared small containers) with fruit
Occassionally sausage (my son is the only one that eats it)
Homemade pizza made a day or two before
Cheesy Biscuits (Put about a cup of milk in with about a tablespoon of vinegar to sour the milk and let sit for a few minutes, 6-7 cups flour, about 1/2 cup sugar, about 2 teaspoons bakingsoda, mix well. Add soured milk and then more milk until a wet consistency, 1 pound of shredded cheese of your choice (thicker shred works well, and I like cheddar), usually need to add a bit more milk, bake at 375 for about 15 minutes. (You could skip the sugar but biscuits bitter from the baking soda...are not tasty!)
Your son sounds like my fiance. He eats cereal before bed then eats pizza hot pockets or burritos when he gets to work lol.
