I made a fairly healthy treat as a side for dinner. Was delicious! I'm a big fan of sweet potatoes. Also need some fresh mozzarella that you slice yourself.
2 large sweet potatoes, cut in half lengthwise
4 slices mozzarella
2 eggs
Herbs and seasoning of choice. I like Himalayan pink salt, white pepper, parsley, a little onion powder or green onions.
Just lay your sweet potato halves on a baking tray and bake at 400 until done. Remove, scoop out most of the filling and set aside in a bowl.
Season and press cheese into skins. Season what's in bowl, add eggs, and fluff with fork. Spoon mixture back into skins and top with green onion if desired. Return to oven until cheese melts and filling is firm (about 20 mins)
I make these as a fun treat on food prep day since I am using the oven alot anyway.

do you buy it?
For the longest time I was using Lawry seasoned salt. Now I use the pink salt.
