Hi everyone! I have been away for a while I apologize. I have a new recipe that I wanted to share. I'm Diabetic so I had to change my diet, but it doesn't mean that I can't still enjoy good food. I have to watch my portion sizes and how much carbs I eat but I have found healthier ways to cook and enjoy many of my favorite foods! And I would be more than happy to share them with you. So lets get started with some candied yams. First we are going to get some sweet potatoes. We need to wash them dry them, peel them and cut them up. Then we need to put them in a bowl and mix them with just a small amount about a tablespoon of canola oil. And I was only making a small amount of candied yams but you can certainly make a larger amount if you like. Make it for the holidays. I only made 3 potatoes each potato about 4 oz in size so then I put the cut up potatoes in a pan lined with foil and I layed them out in the pan in an single layer and I covered them with foil and baked them in the oven at 350 degrees I don't know how many minutes I baked them I just checked on them to make sure I didn't burn them but they steam cook until they are tender maybe about 40 minutes shouldn't be longer than that it depends on how thick your potatoes are it could actually take up to an hour if your potatoes are thickly cubed or sliced and then you sprinkle them with splenda brown sugar blend, nutmeg and cinnamon then you put them back in the oven until the brown sugar is melted this shouldn't take longer than 5 minutes you will know when it is starting to look like candied yams and then you mix it together carefully because the sweet potatoes are delicate when they are cooked they will have a nice little glaze and shine to them from the brown sugar and oil. Serve them warm.
