Tonight I'm making Curry Shrimp & Broccoli for dinner. I'm using a bag of frozen raw peeled, deveined, tail off,shrimp that are small. I bought it at Walmart in the frozen section. They have other sizes and options but this is the one I chose. It is a small bag of shrimp 12oz a little less than a pound. I am going to add some frozen broccoli to it, What I love about making this dish is that the ingredients can be kept in the freezer until you need them so if you like to do your grocery shopping less often and way in advance for several meals at a time this is perfect. I start by adding 2 cups of water to a large nonstick skillet and 1 large chicken bouillon cube. I thaw out the shrimp before I season it up and I put on gloves so that the curry doesn't make my fingernails yellow. I use Mild Jamaican style curry powder which has a lot of flavor but is not really spicy. I add a sprinkle of adobo seasoning, a sprinkle of cajun seasoning, a sprinkle of onion powder, a sprinkle of garlic powder,I add about 2 Tbsp of butter. I add some fresh minced garlic, some fresh diced yellow onion. I steam the broccoli in a colander until it is cooked until it is slightly tender but not overcooked then I put it aside. I only put the large bullion cube and water and butter into the large skillet and turn on the stove to medium heat and add some curry to the water. Then I add everything else including the shrimp to a big bowl and mix it together except for the broccoli. Then I add the seasoned shrimp to the curry broth and let it cook then I add the broccoli and stir it together. This is good served with white rice or over pasta.
