I had to start eating this way because I had a blood test done that showed I was allergic to wheat.
I have seen this diet help with many aches and pains and stomache with bowel issues in many many other people.
I eat everything I had eaten before, it just does not contain wheat and they put wheat in everthing so read the labels. Soy Sauce - Salad dressings.. many things you just would not think! But I just buy Soy sauce with out wheat It taste the same REALLY!

Now- Remember I had to do this, I suggest for everyone whom feels like they have the flu everyday (muscle aches and pains with IBS issues,) feeling sluggish. Go and get a blood test, because I had no idea and I feel a better than I did before...
I still suffer from Ankylosing Spondylitis and Fibromyalgia it just helped with the serious flu feeling- I had everyday.

also I really do miss the bread made from wheat- because it is hard to find one the is equivalent to the taste and texture....
I miss my pasta made from wheat also .... They do have these things gluten free, these two things were hard for me to get use to.
I wish I was not allergic to wheat.

I agree, glucose is in too much food---which is why I avoid processed food (incuding no salad dressings or soy sauce , etc.). If going gluten-free, go cautious and good luck!!!
I am always interest in this topic b/c a good friend of ours with celiac nearly died of the complications before he was dx'd, and I like making him gluten-free goodies so he doesn't feel like he misses out on things like brownies.
Flour that "floats around" in manufacturing plants or is left behind in equipment is also a problem in pizza places. I have to stay away from them even if I eat a salad or if they make gluten free pizza. There is just too much cross-contamination.
Point being, that if you are going to try it, be extra careful so that you can do a real test. There is no point of doing a half-done test and then not REALLY knowing?
And, I tested negative for celiac. I learned at the celiac clinic in Columbia University, NY, that testing negative is not meaningful because there are 11 tests and if you really want to know, you have to do them all. They say the test is meaningful only if it comes out positive, because then you know you have it. That means the test has low sensitivity, and high specificity; high false negatives.
Although I tested negative for celiac disease, I tried this diet about 10 years ago for about 2 weeks for my migraines and about starved to death, that's how much wheat is a part of my diet. I know this diet isn't for everyone. I'm going to give it a good try for a couple of months this time. Like angels2u, even if it doesn't cure anything, I'll learn to eat less wheat and not be so dependent on it to fill me up calorie wise.
Many foods contain "modified food starch". Read labels
Modified food starch can derive from wheat but it may come from corn or some other non gluten source.
You can phone the manufacturer of the product and find out what their modified food starch is made of.
It depends on how strict you want or need to go with going gluten free if you want to be phoning the company of the food item or not.
I know that Celiacs sufferers have to be super strict and that is what they do.

I eat GF most of the time. It agrees with me. Stomach and digestive issues are better. I also feel the foggy head is better too. I've been going GF for a couple of years. I don't feel it does much for fibro pain and other symptoms though.
But still I have tummy issues and other symptoms of gluten sensitivity....Soooo, I think I'm gonna try GF for a bit, and see if it helps.

I have found so many substitutes. Plus, I have learned to just not eat many of the processed foods i used to eat. My processed foods include rice drink, organic peanut butter, gluten free crackers, japanese soy sauce (no gluten), and a hard cider once in a blue moon when others are having beer. Have tried a couple of organic muesli without additives... Some are good.
