Let's face it... We all Turn to food for comfort at one point in our lives. Some (ahem) more than others lol.
Holidays are quickly approaching, and I thought swapping favorite recipes to try would be an amazing way to feel connected to each other! I'll start with mine! I hope you try it and enjoy!
Cranberry Apple Cheesecake:
No bake, fluffy deliciousness!!
Crust:
Be creative! You need about 3 cups of cookie crumbs. And one tbsp melted butter per cup of crumb.
Pecan Sandies
Sugar cookies
Snicker doodles
Ginger snaps
All amazing options!
Mix melted butter until moist
Form in pan and bake about 15 minutes at 350°f.
Or until toasty!
Cheese filling:
1 (8 ounce) package cream cheese (room temperature)
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, whipped
One to one ratio! This will fill one pie pan... I triple the recipe myself.
Beat together the cream cheese, sugar, and vanilla in a bowl until smooth and spreadable.
Whisk whipping cream into cream cheese mixture until smooth and firm. Now is a great time to swirl your fruit filling if you choose. Pour cream cheese into prepared crust.
Smooth the top with a spatula, and refrigerate until firm, about 2 to 3 hours.
Fruit filling:
2 cups fresh cranberries
1/2 cup sugar
2 fresh apples of your choice
Dash of cinnamon
Dash of allspice is optional!
Toss sugar in medium sauce pan on medium heat and start to toast.
Once a little brown add other spices and two to three tbsp water.
Toss in cranberries and simmer until they start to break down and pop.
finally at apples until they are tender crisp.
You want to make sure that the sauce is completely chilled before you Mix in your cheesecake!!!

Oh that sounds really good! I'm doing weight watchers now though and I think I gained 15 lbs just reading that!!! LOL. Gonna save it for Thanksgiving though. Thanks!

Lol... And I'm trying to stick with a vegan diet so... You see how that's going to work.

my daughter and my son are doing a lifestyle/diet called Paleo - they really like it and my son has lost a lot of weight on it. My daughter had lost some but she has other medical issues holding her back some but she really likes it also - this sounds really yummy! thanks!

I'm doing a high carb low fat vegan diet during the week... Weekends are mine! I've lost 80 lbs this past year, is been incredibly easy... I run two restaurants surrounded by meats too.

My favorite tip: since it's Eggnog season as well, simply use the eggnog to dip your bread in for French Toast.

Such, eggnog is a cold beverage made of milk or cream, sugar, and (whipped) eggs, topped off with a sprinkling of cinnamon or nutmeg. Some folks will add rum or whiskey or brandy! It's a popular drink around Christmastime.
